It’s almost picnic time, who is as excited as I am?
The atmosphere of picnics: you get to take your dogs on your date- eat great food and drink wine outside. At least that’s the atmosphere of the picnics I pack.
If you check out my About Me page you’ll see my fur babies. I love to take them with me any places they can go. Harvey is very behaved in public, Raleigh not-so-much. He means well, but he does hold the family back from being a well -behaved- dog-walking-family in downtown Greenville.
This dish screams PICNIC! To be honest, I wasn’t a big fan of coleslaw for a while. Some were too creamy, some had too much vinegar and others were just BLAH. I thought cabbage tasted like a weird version of salad, but turns out- I just hadn’t tasted GOOD coleslaw.
This recipe made me fall in love with coleslaw. And I bet if you try it- you will too. (If you don’t already love it.)
I made these Kielbasa Grilled Cheese Sandwiches and wanted a side dish to cut the spiciness and heat from the sandwiches- this dish was it.
The creaminess of this coleslaw comes from the mayonnaise and mustard base and is accentuated with the vinegar and tabasco sauce. Then, the pop of color and texture from the tomatoes gives it a perfect finish.

- 1 cup mayonnaise
- 2 Tablespoons white wine vinegar
- 1 Tablespoon Dijon mustard
- 1 teaspoon Tabasco sauce
- 1 package coleslaw mix (14 ounce)
- 1½ cup halved cherry or grape tomatoes
- ¼ cup fresh parsley, chopped
- Whisk together the first 4 ingredients.
- Combine the remaining ingredients.
- Add the mayonnaise mixture.
- Season with salt and pepper.
- Serve well chilled.
